PRODUCTION PROCESS

Hello everyone, welcome to Alluvia, We are a local chocolate maker, bean to bars.

100km from HCMC, we have our own plantation to grow cacao trees and one workshop to home- make chocolate. Together with others farmers, we have total 800 – 1000 hectaof cacao trees in Cho Gao districts, before the plantation is bigger with 2000 hecta. Cacao beans in Chogao is famous with fruity flavors and rich in cacao butter.

To make chocolate bars from cacao beans, we process 8 steps:

1st STEP

Harvesting and opening cacao fruit

2nd STEP

We do fermentation in the wooden box, 3 levels, each level 2 days. After 6 days, we take out and move to drying rack.

3rd STEP

Drying cacao beans under the sun, after another 6 days to have dry cacao beans.

4 STEP

Roasting dry cacao beans, abt 15 minutes in 2000C degree, the beans are ready for eating

Winnowing

Grinding &conching cacao nibs and a little bit sugar in 48 hours to have chocolate liquid, please trya very pure, natural and smooth chocolate, it make you enjoy and unforgettable.
